Summertime and the cooking is easy

We just finished a fresh summer meal of tomatoes, cukes, cooked ears of corn and state half-runner beans. The corn was good, but the tomatoes were disappointing. Even though they were locally grown, they just didn’t have that summery taste. They were red, though. We have tomatoes growing out back in what I’m going to start calling “the homestead” in the foothills of western North Carolina. The tomatoes are plentiful and big, but very very green. I love friend green tomatoes, but I don’t think my husband would let me touch ’em!

In the summer  the best way to keep the house cool is to not cook, especially use the stove. And it’s been too hot to even fire up the grill. And as long as my husband buys into that, that’s my story and I’m sticking to it!

And the summer’s all about keeping cool in the stifling heat and humidity that is Eastern North Carolina. And the weather at the homestead isn’t that much better.

  2. We can grill out when you’re here too!!! So many things to do! We’ve been lucky with the weather. I think we have enough shade & breeze to keep things cool. It’s been in the 70s for the past week & in the 50s at night. Lovely!!
